Instant Whole Orange Cake

Quick, moist, delicious - the perfect recipe for a lazy baker like me! Also works well as muffins.

1 big orange (skin and all)

185g butter, melted

3 eggs

1 cup of caster sugar

1½ cups of self-raising flour

Put the whole orange in a food processor and blend until pureed. Add other ingredients, process until well mixed.

Pour into greased, lined 18cm cake tin. Bake in a pre-heated oven at 185 degrees for 50 mins. Turn cake out onto a rack to cool.
